Beijing Meets Catalonia: Gastronomy Bridges Cultural Dialogue | SFC Markets and Finance

The Catalonia Tourism Board, in collaboration with Michelin three-star restaurant Disfrutar, presented a culinary event in Beijing. The event was attended by Salvador Illa, President of the Government of Catalonia, along with Miquel Sàmper, Minister of Business and Labour, and Arantxa Calvera, Director of the Tourism Board.

Calvera highlighted cuisine as a vital pathway for cultural understanding. She explained that the menu drew inspiration from the "Grand Tour of Catalonia" route, designed to present diverse regional flavors. 

Eduard Xatruch, head chef of Disfrutar, emphasized food’s role as a powerful vehicle for cultural exchange, fostering mutual understanding between China and Spain. He noted that their culinary approach involved pushing boundaries while deeply respecting the land that nourishes them, a philosophy he likened to China’s "thinking of the source when drinking water". Xatruch conveyed that combining Catalan ingredients with Chinese culinary traditions creates a unique “taste of the mind”, allowing two cultures to connect on the palate and evoke a universal sense of memory and connection.

The presentation explored the essence of Catalan gastronomic culture, featuring dishes such as Disfrutar's notable calçotada (grilled onions).
